Coffee Brine
Ingredients
- 100g dark soft brown sugar
- 100g cooking salt
- 1 orange zested
- 3 bay leaves
- 10g fennel seeds
- 20g white peppercorns
- 8g fresh thyme
- 50g used coffee grinds wrapped in muslin cloth (making it easier to deal with the meat afterwards)
- 600ml water
Method
Place all the ingredients into a pan and bring to the boil, allow to cool.
The brine works well with pork. Brine a shoulder of pork for around 12 hours, rinse well then slow cook until tender. Also try brining a pork chop for 2-3 hours, rinse well before cooking.
