Beetroot Ball Sub, Cucumber, Mint And Pear Slaw
Ingredients
- 1 Stick of V Pud (vegan black pudding)
- 100g Grated fresh beetroot
- 2 Pears grated
- Half cucumber grated
- 10 Leaves mint chiffonade
- 3 tbsp Vegan mayonnaise
- Beetroot glaze
- Four sub rolls
Method
Mash together the V pud, grated beetroot and one of the grated pears. Form into balls.
Mix together the vegan mayo, mint and other grated pear, to make the slaw.
In a frying pan, using veg oil, fry the balls gently until brown on all sides. Transfer to a large bowl and gently cover in the beetroot glaze/
Serve in a sub roll with the slaw.
