Ingredients
- 2 Tins Jack Fruit (600g drained)
- 1 Onion diced
- 2 Cloves garlic crushed
- 2 Red chilli de-seeded and diced
- 2 Sticks celery diced
- 800g Chopped tinned tomatoes
- 2 tsp Harissa spice
- 2 tbsp Cocoa powder
- 2 tbsp House of lords BBQ sauce
- 1 Bay leaf
- 1 L Water
- Seasoning
Method
Sweat the onion, garlic, chilli & celery in a little oil in a large pan for a few minutes
Add the Harissa spice & cocoa and cook for a minute, add the rest of the ingredients.
Top up with the water, bring to a simmer and cook for 30 mins, mash up the jack fruit & correct the seasoning.
