White Bean, Avocado, Sun Blush Tomato, Lime, Smoked Tofu Panini

Serves: 4 portions

Ingredients

  • 400g Butter beans
  • 100g Sun blush tomatoes chopped finely
  • 1 Large avocado
  • 1 Block smoked tofu
  • 1 Lime
  • 4 Panini rolls

Method

Mash together the butter beans, lime & tomatoes.
Slice the smoked tofu thinly. 1 block will be enough for 8 - 10 sandwiches
Half the Panini roll lengthways and spread on the bean mix then layer the avocado and tofu on it.
Cook in a Panini press or grill with weight until toasted and golden.
